Ingredients
- 7-9 tomatoes
- Yellow onion
- Garlic head
- Rosemary
- Olive oil
- Onion powder
- Garlic powder
- Italian herbs
- Paprika
- Salt
- Pepper
- Tomato paste
- 3 cups chicken broth
- 1/3 cup heavy cream
- Sugar
Directions
- Chop and Roast Tomatoes, half yellow onion, garlic head (chop of the top), rosemary, olive oil, and seasoning at 410 F on a sheet pan for 40 min.
- Sautee the rest of the onion and some olive oil. Then add half a can of tomato paste. Cook for 3-5 min add salt and pepper.
- Add broth and bring to a simmer.
- Add the roasted veggies but discard the rosemary and squeeze out the garlic into the pan.
- You can add basil if you have it. Bring to a simmer then blend everything together.
- Add heavy cream and a spoonful of sugar, season to taste and serve.
